Hudson’s, the first department store built in Detroit, dominated the Downtown skyline with seemingly endless shoppes. 

We would trek up the escalator to the top floor and indulge in a meal at The Hudson’s Restaurant. While the sheer ambiance of the restaurant was more than a I could ever imagine, it was the Popovers that caught my attention. Light and airy; warm and flaky. I had never before tasted anything so delicious.

Unfortunately, Hudson’s as well as its signature restaurant closed many years ago.

This year I want to bring a bit of nostalgia to the holiday season. I’ve crafted this basic recipe reminiscent of the Popovers I enjoyed in my youth at The Hudson’s Restaurant.

I’ve paired these pastry delights with a sweet and savory twist (derived from my favorite recipes) – Herbed Butter and Cranberry Orange Jam

In order to truly make this jam with less sugar (and more love), I’ve swapped out granulated sugar for 100% Maple Syrup. But remember syrup is a highly concentrated sweetener so you do not need much.
